This recipe brings the best of Prairie flavour to your plate: sweet maple syrup, sharp mustard, and juicy chicken thighs with perfectly charred edges. It’s simple to prep and even easier to love—great for weeknights, weekend grilling, or anytime you want something that tastes like summer in Saskatchewan. Pair it with grilled veggies, baked potatoes, or a crisp green salad for a balanced meal.

Ingredients (Serves 4)

  • 2 lb (900 g) boneless, skinless chicken thighs
  • 3 tbsp grainy mustard
  • 2 tbsp Dijon mustard
  • 2 tbsp pure maple syrup
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh thyme or parsley, to garnish (optional)

Instructions

  • Make the marinade:In a medium bowl, whisk together grainy mustard, Dijon, maple syrup, vinegar, garlic, olive oil, smoked paprika, salt, and pepper.
  • Marinate the chicken: Place chicken thighs in a shallow dish or resealable bag. Pour marinade over the chicken, turning to coat. Cover and refrigerate for at least 1 hour (up to 12 for deeper flavour).
  • Grill time: Preheat your grill to medium-high. Remove chicken from marinade, letting the excess drip off. Grill for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C) and you see golden grill marks.
  • Rest & serve: Transfer to a plate and let rest for 5 minutes before serving. Sprinkle with fresh herbs if desired.

Tips & Serving Ideas

  • Swap in bone-in thighs or drumsticks—just adjust cooking time slightly.
  • No grill? Use a grill pan or broil in the oven on a foil-lined tray.
  • Add a squeeze of lemon right before serving for extra brightness.
  • This marinade also works great with pork chops or tofu.
